Vanilla cupcake with cream cheese frosting

INGREDIENTS:
​
For the cupcake:
​
-
1/2 cup all-purpose flour
-
1/2 tsp baking powder
-
1/8 tsp salt
-
1 large egg
-
1/4 cup granulated sugar
-
1 tsp + a drop of pure vanilla extract
-
4 tbsp unsalted butter melted (slightly cooled)
-
1/4 cup milk

For the Frosting:
​
-
3 1/2 tbsp butter
-
4tbsp cream cheese (room temperature)
-
2tsp Strawberry extract
-
1tsp (or more) cinnamon powder
-
A pinch of salt
-
2/3 cup powdered sugar + additional 1/3 (ONLY if you want stiffer frosting)

INSTRUCTIONS:
​
For the cupcakes:
​
1. Preheat the over to 350 degrees F.
​
2. Beat together the egg and sugar until well combined using a whisk.
​
3. Then add the vanilla extract and melted butter and mix it in for another 30 seconds or until well combined.
4. In a small bowl combine the flour, baking powder and salt. ​
5. Mix half the dry ingredients to the wet ingredients. (Be sure to not over-mix)
​
6. Add in the milk and then the remaining dry ingredients. (Be sure to not over-mix)
​
7. Bake at 350 degrees F for 12-15 minutes or until a toothpick inserted comes out clean. This should make around 4-5 servings!

For the Frosting:
​
1. Mix the butter and cream cheese until well combined.
​
2. Add in the remaining ingredients and keep mixing until smooth and well combined then put it in a zip-lock bag (yes this can be used as a piping bag!) or a piping bag and frost your cupcakes!
3. Top with anything you like - sprinkles, chocolate, fruits, crumble, cereal and more!
​
4. Enjoy your cupcakes before the heat melts your frosting!

Kitchen Tips:
Tip 1
Do not over mix. This will create a dense muffin.
Tip 2
Use a glass/cup to support your ziplock bag when filling the frosting into one corner of the ziplock bag.
