Drunken noodle

INGREDIENTS:

​

5 garlic cloves, roughly chopped

3 small red chillies, roughly chopped

1 large yellow chilli, roughly chopped

2-3 tbsp vegetable oil 

1 cup sliced Asian greens (Recommendation: broccoli, lettuce, cabbage, bean sprouts bok choy or any vegetable of choice)

3 small sliced baby corns (optional)

1/2 a scallion cut into small pieces 

300grams of rice noodles or 250 grams of spaghetti noodles

3 tbsp mushroom vegetarian sauce 

1 tbsp Soya sauce  

1tbsp sriracha 

1/2 tsp white sugar

1tbsp lemon juice

Fried tofu of your preferred quantity(the more the better!)

1 cup heaped Thai basil*

INSTRUCTIONS:

  1. In a pan, fry the tofu with some oil and a pinch of salt until light, golden brown.

​

  2. Add in the oil on high heat and throw in the garlic and chillies and after 1-2 minutes add in the vegetables. Let this cook for a bit. 

​

  3. Add in the noodles and the sauces(3), scallions, and tofu.

​

  4. Once everything is combined and cooked add in the basil and lemon juice. Combine all of this and let it cook together for less than a minute.

 

5. Switch off the heat and let this sit for 2  minutes.

 6. Serve and enjoy!
