Eggplant Hero

INSTRUCTIONS:

​

1. Follow our eggplant parmesan recipe to make the eggplant filling. 

​

2. Cut the bread in half and scoop out the inside of the bread to make bread crumb or to use later.

​

3. Fill in the eggplant and sprinkle over some cheese then bake in the oven for10 -15 minutes until bread is crisp and cheese is melted OR to your desired texture. 

​

** You can spread some mayonnaise onto the bread before adding the filling and baking.
