INGREDIENTS:
​
2 pieces of pressed/hard tofu
2-3 tbsp oil(for frying tofu)
1/4 cup mushroom (optional) chopped
3 Asian red shallots, sliced(optional)
3 tbsp finely chopped coriander
¼ cup mint leaves mixed with basil leaves
2 spring onions, finely sliced
2 tbsp raw glutinous rice*
3 tbsp soya sauce
2 tsp grated palm sugar or brown sugar
2 tsp chilli flakes/powder
3 tbsp lime juice
INSTRUCTIONS:
1. Pan-fry the tofu to your desired texture or till a light golden brown colour is visible. (Optional step but highly recommend)

2. In a bowl mix the remaining ingredients.
​
3. Combine the tofu to the remaining ingredients in the bowl and mix well. You can top this with some chillies or chilli powder and serve with sticky rice or some vegetables.
​
This can be eaten as a main dish or as a salad!
