Pasta Pomodoro

INGREDIENTS:

For Pasta sauce: â€‹

  • 3 tbsp olive oil

  • 6 ripe plum tomatoes 

  • 2 cloves of garlic 

  • 1 medium-sized carrot 

  • 2 tbsp chopped basil leaves

  • 1/2 tbsp dried oregano

  • 1 tsp sugar

  • Salt and pepper for taste 

  • Parmesan rye (optional)

For Pasta:

  • 1 pound pasta

  • 2 tbsp of butter or olive oil 

  • 1 clove of garlic 

  • Some cherry tomatoes

  • Some chopped basil leaf

  • Salt, pepper and oregano for taste

  • Half cup parmesan cheese + Half more for serving

INSTRUCTIONS:

​

For Pasta sauce: 

​

  1. Boil the tomato for 5 minutes then let it cool till you can touch and peel it. 

  2. Once it has cooled completely you can crush it with your hands or use a food processor.

  3. Grate carrots finely. 

  4. Heat the oil in a pot or pan. Once hot, add in the garlic and sauté for 1-2 minutes.

  5. Then add in the carrots and tomatoes and sauté for 5 minutes

  6. Add in the salt, pepper, oregano and cheese rye. Mix well then let this boil for 30 minutes until the oil appears on the surface.

  7. Julienne the basil leaves and add it to the sauce, switch off your heat and let this simmer for a few more minutes before serving. 

  8. You can add more salt, pepper, oregano, chilli flakes or some parmesan cheese for additional flavours.

For Pasta:

​

  1. In a pan add in the butter and oil and sauté in some garlic.

  2. Then add in some cherry tomatoes.

  3. Now add in the remaining ingredients and sauté until well combined and cooked! 

  4. Top with some finely chopped basil leaves and parmesan cheese.

  5.  Serve with some garlic bread and enjoy!
