INGREDIENTS:​
​

6 eggs
-
3 - 4 tbsp oil
-
1teaspoon salt
-
1 tablespoon soya sauce or fish sauce
-
1 1/2 tbsp Thai chill jam (optional)
-
3 large tomatoes cut into small pieces
-
Some chopped coriander
-
Some chopped climbing wattle (optional)
-
A pinch of pepper
-
Any additional vegetables you like!
INSTRUCTIONS:

1. In a small pot heat the oil.
2. If you like your vegetables cooked you can pan fry them separately then add it in the bowl along with the rest of the ingredients.
3. Add all the ingredients in a bowl except the tomatoes and then whisk the eggs well.
4. Once the oil is heated and egg is well whisked pour it into the pot from a height. This method creates a thick and fluffy egg.
3. In less than a minute scrape the sides and gently push the egg from underneath.
4. Let the egg sit like that for around 30 seconds.
5. Add in your tomatoes.
5. Flip the egg and gently break them apart to form your scrambled egg.
6. Continue breaking the eggs apart and stirring them a few times until cooked or until it has reached the desired texture!
7. Once complete, top with some coriander or basil leaves and serve with rice or toast!
