
Twice baked Potatoe

INGREDIENTS
4 large potatoes, washed and dried
1/2 cup of sour cream
3tbsp unsalted butter(room temperature)
1/2 cup Whole milk
1- 2 tbsp heavy cream (option, increases richness)
1 tsp salt
1/2 tsp pepper
1/2 - 1 tbsp oregano
1/2 tsp paprika
1 1/2 cup shredded extra-sharp cheddar
1/4 cup sliced green onions
Parsley and parmesan cheese for garnish (optional)
Tomatoes and balsamic vinegar (optional extra garnish!)
** You can also add some shredded broccoli or some bacon into this recipe!
INSTRUCTIONS:
1. Preheat the oven to 400 degrees F
2. Clean the potatoes well and bake the potatoes for 1 hour or until cooked and crispy on the outside.
3. Allow potatoes to cool slightly. Once the potatoes are warm enough for you to touch, cut the potatoes in half(vertically).
4. Scoop out the potatoes and keep them in a bowl. Ensure that there is not only a thin layer to support the filling but also enough space to fill in a good amount of filling.
5. In a small pot heat the milk and butter, until melted and warm but not boiling.
6. Pour this mixture into the bowl with the potatoes and add the remaining ingredients (USE ONLY 1 cup of cheddar cheese)
7. Mash the potatoes until smooth and creamy then mix them together until well combined.
8. Scoop the potatoes mixture into each half of the potatoes then top with as much cheese as you want.
9. Then bake for 15 minutes or until cheese is melted and has the desired texture!
10. Sprinkle parmesan cheese while hot out of the oven.
Garnish as you like and serve while hot!!
**Recommendation: Apply garlic paste outside the potatoes, before putting the filling and baking the second time
