Pesto

INGREDIENTS:

​

  • 2 1/2 cups fresh basil leaves

  • 1/2 cup roasted almonds

  • 2 small cloves of garlic

  • Salt and Pepper, to taste

  • Juice from 1/2 a lemon

  • ½ cup extra virgin olive oil

  • ¼ - 1/2 cup of freshly grated Parmigiano Reggiano (good quality)

  • Extra olive oil to finish (for storing)

** All quantities of ingredients can be adjusted as per your desire

INSTRUCTIONS:

1. In a food processor blend in the garlic. 

​

2. Add in the almonds and basil then pusle(Blending technique) it. 

​

3. Then gradually add the olive oil, parmesan cheese, salt and pepper while blending the mixture.

​

4. Finally add some lemon juice and mix it. (Lemon juice will prevent your pesto from turning dark and will maintaining its colour) 

​

5. When storing the pesto add olive oil on top before closing the cover and refrigerating. **Refer to the picture (Olive oil seen floating on top)

​

** Taste, and texture are all based on personal preferences. Using these ingredients you can create your perfect pesto to use for anything at any time.

Pesto can be stored in the fridge for up to 4 weeks and in the freezers for months!!!
